Gingerbread

GINGERBREAD

Makes enough for one train or equivalent
Prep time: 15 mins (plus 2 hours resting)
Cooking time: 10-15 mins

Ingredients
1 small egg
160g “00” plain flour
50g icing sugar
40g lightly heated honey
1 teaspoon soda
A pinch of good cinnamon
A pinch of ground cloves
  1. Mix all the ingredients together and knead into dough.
  2. leave the dough to develop for at least 2 hours in the fridge (it may be left there for up to 10 days).
  3. Roll out into a 2-3mm thick layer and cut the individual parts of the train.
  4. Lightly smear the baking sheet with fat or use baking foil; smear the gingerbread with egg yolk and bake at 150 degrees until brown.
  5. Decorate and glue the parts of the train together with the icing and tie using a ribbon.
