QUICK PASTILLAGE

Makes 260g (9oz) pastillage

Ingredients
2 teaspoons CMC
260g (9oz) stiff peak royal icing
Icing Sugar
  1. Mix 2 level tsp of CMC into 260g (9oz) stiff peak royal icing.
  2. The mixture will thicken immediately.
  3. Knead on a work surface sprinkled liberally with icing sugar until the mixture forms a paste and is smooth and crack free.
  4. Keep airtight and store in a refrigerator.
  5. Bring back to room temperature before use.

 

NOTE: Amount of CMC can be varied depending on humidity and your preference of stiffness of paste.
