BUTTER CREAM

Makes about 625g (1 1/4lb)

Ingredients
175g (6oz) unsalted butter, softened
2-3 tbsp. milk
1 tsp vanilla essence
450g (1lb) icing (confectioner’s) sugar, sifted
  1. Place the softened butter, milk and essence into a mixer.
  2. Add the icing sugar a little at a time, mixing on medium speed, until light, fluffy and pale in colour.
  3. Store in an airtight container and use within 10 days.
  4. Bring to room temperature and beat again before use.
