Vanilla Oreo Cake

VANILLA OREO CAKE

1 ½ cups all-purpose flour 2.25 cups 3 cups
1 cup granulated sugar 1.5 cups 2 cups
2 teaspoons baking powder 3 teaspoons 4 teaspoons
½ teaspoon salt ¾ teaspoon 1 teaspoon
½ cup butter, chopped into 1” cubes ¾ cup 1 cup
2 eggs 3 eggs 4 eggs
½ cup milk ¾ cup 1 cup
½ teaspoon vanilla extract ¾ teaspoon 1 teaspoon
10 quartered Oreos 15 quartered Oreos 20 quartered Oreos
Filling Garnish
8 ounces softened cream cheese Crumbled Oreos (about 10)
1 teaspoon vanilla Halved Oreos
2 cups icing sugar Chocolate Ganache
2 cups whipping cream (heavy cream) Ateco Tip 827
  1. Preheat oven to 350F and grease cake pans.
  2. In a stand mixer with paddle, combine flour, baking powder, sugar and salt and mix.
  3. While mixing, add butter one cube at a time and mix until the butter has broken up into tiny pieces.
  4. Add eggs and continue to mix.
  5. While mixing, slowly add milk and vanilla. Mix until smooth.
  6. Pour into cake pan, put in oven for 40-45 minutes (or until an inserted toothpick emerges clean).
  7. Sit on a cooling rack before removing from pan, allow to cool fully.
  8. While cooling, prepare filling. In a stand mixer with whisk, whisk cream until forming stiff peaks. Place in the fridge.
  9. Using mixer with paddle and a clean bowl, beat cream cheese until soft.
  10. Add icing sugar and vanilla and mix until smooth.
  11. Add whipped cream and mix until smooth.
  12. Ensuring each cake layer is even and level, place one cake on cake board and smooth 1/2 cup of filling onto it in an even layer.
  13. Smooth filling and then place second cake on top.
  14. Cover entire cake with a layer of filling.
  15. Place in the freezer for 20-30 minutes to set.
  16. Apply second coating of filling.
  17. Place remaining filling into an open star tip piping bag and refrigerate for later.
  18. Pour chocolate ganache onto the edge of the cake, a small amount at a time.
  19. Place crumbled Oreos in the cake centre, and pipe large open stars in a circle with remaining filling.
  20. Place half an Oreo on top of every second star.
  21. Slice and serve!
